Laura Johnson created the cake for her own wedding but never got chance to sample it on the day

A wedding cake a baker made for her own big day has been named best in Britain.

Laura Johnson, who owns Abba Cakes in Hoylake, Wirral, took the British Baker magazine prize for her signature chocolate cake.

She said she created the recipe, which merges British sweet indulgence with Latin flavours, for her own wedding but never got chance to sample it on the day.

“When I went to try it after the pictures there was none left, so I knew that people liked it.”

The cake, which contains a double chocolate ganache, dark chocolate sponge and layer of dulce de leche, was praised for its contrast of flavours and rich texture.

Laura explained: “I said at that time if I ever have a cake shop I’ll put it on the menu and since then it’s been the favourite in the shop “

Laura was born in Columbia and studied catering in Spain

Laura is originally from Columbia and studied catering in Spain before moving to the UK five years ago.

She said the award “meant the world” to her and her team, who she said put lots of love, dedication and passion into the creation.

“Chocolate cake is not a big thing in Columbia and when I was studying there was nothing like ‘cake’ done.

“I absolutely love everything about British cakes, so when I was studying I decided to try [British] recipes with [Columbian] flavours.

“That’s why it has dulce leche, it’s a little bit Latin.”

Team member Nikolina Perusko said: “We make every cake like we’re making it for someone we know, so we try to do our best to create something we’d like to receive as a gift.”
